Struan Bread

Struan Bread is an archaic Scottish harvest bread. I got the recipe from Brother Juniper's Bread Book by Peter Reinhart. I used to bake it with some regularity, especially on today because it's my birthday, and Struan is traditionally baked on Michaelmas which is close enough to my birthday as to make no difference.

 

I had to make a couple of substitutions for Struan because I'm vegan. Instead of honey, I used Barley Malt syrup, and instead of buttermilk, I used soy yoghurt. I highly recommend Brother Juniper's Bread Book.
