The arrachera (flank steak) is a beef steak cut in Mexican cuisine that originates from the city of Monterrey. The arrachera steak is cut from the thoracic diaphragm of the cow. Since it is a rather hard cut of meat, it is usually tenderized by using commercial tenderizers, or by mechanical tenderizing, using a method to create an even cut. The meat may be also marinated with vinegar and spices in order to render it more tender and tastier.
