Grist mill
The terms gristmill or grist mill refers to either a building in which grain is ground into flour, or to the grinding mechanism itself. Built around 1876, this water powered mill is located on Cedar Creek just upstream of the Lewis River and is still operational, grinding grains as needed. It's the oldest commercial building in Washington state still serving its original purpose.
There are volunteers on hand to grind the wheat into flour and to give tours. Every visitor is offered a free bag of freshly-ground flour, something I wouldn't know what to do with.
