In honor of its 30th anniversary, the Academy of Culinary Arts hosted a series of special dinners at Careme’s, the on-campus, student-run gourmet restaurant, featuring the culinary talents of some of ACA's top grads.
On Dec. 12, Chef Mike Stollenwerk, executive chef/owner of Fish restaurant in Philadelphia, prepared a menu of: Hirmasa, Maine Scallops, Skate Wing, Halibut and Goat's Milk Panna Cotta prepared with Marcona Almond Streusel, Black Olive Caramel and Blood Orange, for dessert.
