A fellow collector mentioned the following in a facebook post "I suspect that Bouquet might have been John Moss's own pottery in later years. If you get a full set of these fish "as above" 2 are marked Bouquet and one is marked Moss in the descending sizes. Not proof I guess but certainly a pointer..."
