Been a while since I last tested an upcoming Cook's Illustrated recipes. Left to my own devices, chicken parmesan is not a dish I would make because of the hassle of shallow frying. I'm glad I went ahead with the recipes and then some. In addition to the four servings of chicken, I made use of all the leftover breading and frying oil with a batch of eggplant parmesan. A very satisfying dinner with simple spaghetti in homemade tomato sauce.
