Ontario blueberries + full fat buttermilk = wildly delicious muffins! Oh, and dipping the top with melted butter before coating in cinnamon cardamom sugar doesn't hurt either. This is probably the best-looking blueberry muffin recipes I tried so far. The crumb is tender yet it rises to a gorgeous round dome. Certainly reminds me of another picture perfect muffin I make.
In Toronto, we only find skimmed buttermilk and I just never understand the appeal. That is until I discover huslanka. It is basically full fat buttermilk with a rich tangy flavour. Not at all watery! I can't wait to bake more things with this new discovery.
