Apricot Pecan Crumb Cake

A delightful snack cake that is so easy to make it's perfect for impromptu let's-have-cake moments. This is the first recipe I'm trying out from Flo Braker's Baking For All Occasions.


The bottom layer is tender cake studded with dried apricots with a crumbly topping of cinnamon pecan streusel. This recipes is highly adaptable for fresh or dried fruit with complementing nuts.


The mixing method is very different from recipes I'm more familiar with. Flour and sugar were mixed together with grapeseed oil to form a crumbly base. Part of this base is made more crumbly with the addition of chopped nuts and more spices to make the streusel topping. The rest of it were made into a smooth batter with the addition of buttermilk and egg. Fold in the fruit, smooth in the pan, and lightly press in streusel. I can totally see myself making this cake when my toolbox is not readily available at my disposal.
