Duck Eggs Over Wild Rice
Comfort food with a healthy twist. A bowl of steaming rice topped with fried egg is a simple but satisfying meal for me growing up. Not to mention, cheap and nutritious too. This updated version uses whole grain wild rice cooked in a shiitake mushroom broth with dices of mushroom mixed in along with chopped cilantro. Umami is good, no? The duck is fried sunny-side-up with splashes of soy sauce and sesame oil. The fragrant roasted sesame matches well with the richness of the yolk.
