Tomato & Goat Cheese Salad

Topped with a basil vinaigrette that was made using basil from the backyard, champagne vinegar, olive oil, s&p.

 

The recipe calls for slices of goat cheese, but we had crumbles at home. The crumbles worked perfectly. This was a really great starter and a good way to use up those tomatoes that can't wait another day to be consumed.
