Fresh Salad Appetiser, Uzbek Cuisine - Samarkand, Uzbekistan
In Uzbek national cuisine, a full meal will start with traditional bread that is stamped with the local signature of the baker and a small variety of fresh vegetable salads. Some of the most common salads include relished beets. This one combines freshly sliced eggplant, radishes and peppers on a bed of greens and sprinkled with a garnish of parsley.
In a full banquet meal in Uzbekistan, this is just the beginning. Save room for the savoury soup that will follow, then for the main course -- plov. This heavy rice and roast lamb dish varies by region.
