Jaggery in the making

Jaggery is raw cane juice, boiled and boiled, then boiled some more. In the end it is thick, sticky brown taffy-like syrup poured into blocks. He stands with the last cooking of the sugar as it sets and thickens before pouring into square molds that will be sold in the markets. It is a favorite in the winter months.
