Tokyo - Ginza: Bird Land Ginza - Negima

The twelfth course of the omikase at Bird Land Ginza was negima (ネギ間 ・ ねぎま), chicken pieces and leek, using momo (もも), or leg meat.


Bird Land Ginza (バードランド), located in the basement of the Tsukamoto Building at 4-2-15 Ginza, is a one-star Michelin rated yakitori grill headed up by executive chef T. Wada.


Yakitori (焼き鳥/やきとり/ヤキトリ), literally "grilled fowl", is technically a Japanese type of skewered chicken, but has come to also refer to all Kushiyaki, or skewered food in general. The average yakitori is made from several bite-sized pieces of chicken meat, or chicken offal, skewered on a bamboo skewer and grilled, usually over charcoal.
