Tokyo - Ginza: Bird Land Ginza - Momo
The eleventh course of the omikase at Bird Land Ginza was momo (もも), or chicken thigh meat with skin on.
Bird Land Ginza (バードランド), located in the basement of the Tsukamoto Building at 4-2-15 Ginza, is a one-star Michelin rated yakitori grill headed up by executive chef T. Wada.
Yakitori (焼き鳥/やきとり/ヤキトリ), literally "grilled fowl", is technically a Japanese type of skewered chicken, but has come to also refer to all Kushiyaki, or skewered food in general. The average yakitori is made from several bite-sized pieces of chicken meat, or chicken offal, skewered on a bamboo skewer and grilled, usually over charcoal.
