This was so very good too. Perch. Sweet, delicate, lovely. Oh my gosh, I have never coveted a fish before in my life! Oswaldo, the owner-chef, came out and chatted with us, and told us how he prepared the fish. First, a day in salt. Then, a day marinading in chiles. Then, roast it.
