Casa Crespo Cooking Class
One of the best experiences in Oaxaca was the day we spent at Oscar Carrizosa's Casa Crespo cooking class.
Casa Crespo is a small bed and breakfast, cooking school and site for reservations-only special dinners just north of Oaxaca's city's center.
Oscar is friendly and laid-back and allows his pupils to choose their own menus - unlike many of the more commercial classes available in Oaxaca.
We arrived at the lovely Casa Crespo on the Saturday morning we were in Oaxaca, enjoying coffee and bread with homemade jams before heading to the nearby market to get the necessary items for our menu. Oscar explained things we saw as we liked.
When we got back to the house we started on our menu:
Quesadillas - epazote and Oaxacan string cheese
Fried, cheese-stuffed squash flowers
Salsa de tres chiles
Salsa made with guajillo chile (I think)
Sopa de piedras (shrimp soup cooked with red-hot river rocks)
Mancha-manteles (fruit mole with apples, plantains over chicken)
Horchata (rice drink)
Rose petal ice cream
Everything was wonderful. More photos to come!
