1/4 cup pumpkin puree
1 cup brown rice flour
2 tbsp brown sugar
1 tbsp arrowroot
½ tsp cinnamon and nutmeg
¾ cup soy creamer
Egg Replacer for 2 eggs whisked into 2 tbsp orange juice
1 tsp vanilla Extract
2 Tbsp Vegetable Oil
Whisk together and pour into waffle iron and cook as directed.
Sprinkle with some pecan bits...
