Cream of Carrot Soup

Delicious and satisfing....recipe to follow.

1 tbsp vegetable oil

1 onion, diced

1lb carrots, diced

2 tsp coriander

3 tbsp toasted pine nuts

6 cups vegetable stock

Fresh cilantro, chopped

salt

black pepper

 

Saute the onions and toast the pine nuts in the oil and coriander. Add to the stock and mix in rest of ingredients- simmer 1 hour until tender. Puree in batches and then reheat.

Serves 4-6
