Blueberry Streusel Muffins

Recipe:

 

1/3 cup raw sugar

1/4 cup margarine

Egg Replacer for 1 egg

2 1/2 cup cake flour

4 tsp baking powder

1/2 tsp salt

1 cup soy creamer

1 tsp vanilla

11/2 cup blueberries

 

Streusel:

1/2 cup raw sugar

1/3 cup flour

1/2 tsp cinnamon

1/4 cup margarine

 

Combine muffin batter thoroughly, fill muffin tins ( lined or unlined) a little more than 1/2 full - top with some streusel- bake at 350 degrees 15-20 minutes or until golden.

Makes about 15.
