Strawberry Coconut Cuppies

Recipe to follow

 

2 1/2 cups cake flour

2 tbsp baking powder

Pinch of salt

Sift together.

 

1 1/2 cup raw sugar

1/4 cup vegetable oil

1 tsp vanilla

1 tbsp almond extract

1/4 cup coconut milk

 

Cream together.

 

Egg Replacer for 4 eggs

1/2 tsp cream of tartar

Beat until semi-peaks form - 15-18 minutes.

 

Combine dry and wet ingredients -then egg replacer.

Fold in 1/2 cup diced strawberries and 1/4 cup coconut.

 

Fill liners 3/4 full and bake 25 - 30 minutes at 350 degrees.

 

Glaze:

2 cup powdered sugar

1/4 cup strawberry puree

Combine and dip cooled cuppies in glaze.

Dip them one more time in coconut.

 

Makes 15 -18 cuppies
