    It's almost Thanksgiving...and Thanksgiving calls for my special Macaroni and Cheese stuffed Spam. This one's for you Lydia, enjoy.

      Well, since I invented this dish (I think) and I'm too lazy to make it most of the time, I decided it should be a holiday tradition. I picked Thanksgiving because that's the one time when there are a lot of kids around to try it. I think it tastes very, very good!

      This is very interesting.... I am intrigued. You should post the recipe. I heard a vicious rumor that there is a spicy spam out there and that it's really hard to find... do you know if there is any truth to this? I figured you would know since you seem like a spam connoisseur.

      Wow - this is like the reverse of what I make for my kids, and they (and I) love it! I usually just cut up chunks of spam and put it in the mac 'n cheese - never ever thought about doing it this way! Lemme see if I got this right - cook up the mac, cut out a hole in the spam, spoon in the mac, then fry it up? Is there a step I'm missing? I'll def. have to try this. :)

      Rocio, the spicy Spam rumor is, in fact, true. I have taste tested it in my laboratory. I don't think it's all that hard to find, although I have never purposely looked for it. When fried and eaten with eggs it resembles the taste of chorizo. Tiffany, the step you are missing is to refrigerate the spam over night between the stuffing and the frying. The purpose of the chilling is to prevent everything from falling apart when it's sliced. Make sure to pack the mac in tight! Your kids will love doing this.
