5th Course: Babbo Sweetbreads

Babbo Veal Sweetbreads

Based on Mario Batali's recipe for Fennel-dusted Sweetbreads with membrillo vinaigrette in his cookbook "The Babbo Cookbook".


I was so totally blown away by the Batali's sweetbreads at Babbo, that we decided to recreate it. This was my friend's replication of the recipe. I'd say he hit it spot on. What I especially enjoyed about this version is that we substituted out the duck bresaola for julienne of bacon, which was crisped along with the pickled onions. The bacon retained its crispiness a lot better than the duck bresaola did at Babbo.


Instead of making a membrillo vinaigrette, my friend whipped up one made of apples and rhubarb. Wonderful.
