    Almond cream layered with tomato confit with "strawberry soup" and topped with a milk foam.

    Notes: Strawberry predominated the smell, but together with the tomato confit, which lended a meatiness that stepped in for the texture of fruit, this little creamy verrine had the effect of cherry! The almond cream wasn't nearly as over-powering as I had feared. This pre-dessert did its job - delivering a very simple and very refreshing mezzo between the savory and the sweet courses.
