Seafood with Bonito Guts

Seafood with Bonito Guts

Raw salmon, raw tuna, sea urchin, salmon roe, and radish sprouts. ($6)

Notes: We had no idea what to expect from the menu description. This was amazing. Not only was it a generous portion of raw fish, but the flavor was wonderful. At first, we thought the threads of bonito guts were raw strands of chicken liver (That's exactly what they looked and tasted like. "Bonito guts" wasn't actually on the menu description, so we didn't know what to expect.) The guts had been salted.

I'm not sure what the fish was dressed with, but I suspect it involved soy sauce and perhaps just the faintest touch of rice vinegar.

The salmon roe was very fresh. Though it's not the season for sea urchin, it was quite good.

For $6, this was a tremendous deal. This could easily be a light meal (the bowl is bigger than this photo suggests).
