Tarte Sablée à la Châtaigne
Et Citron confit, Sabayon au Lagavulin (£17)
(Chestnut and Lemon confit tart, Whisky Sabayon.)
Notes: The sablée crust was only a ring. The interior consisted of a ring of chestnut mousse with a core of lemon confit (think lemon curd the consistency of very fine and silky apple sauce). This tart "filling" was topped with a wonderfully strong whiskey sabayon and crowned with a crisp sugar dome.
