Cellar-aged Wisconsin cow milk cheese.

Notes:

 

Carr Valley Mobay

Wisconsin sheep & goat milk cheese separated by a layer of ash.

Notes: Made in the style of Morbier, the great French cheese, Mobay offers my two favorite milks (sheep and goat) all in one. I prefer the goat layer, but both are very nice.

 

Natural Valley Cheese “Redstone Robust”

Cellar-aged washed rind Wisconsin goat milk cheese.

Notes: Despite the name, I found this cheese to be the least "robust" of the three. It is a clean-tasting semi-soft aged cheese with an overriding sea salt salinity.
