I *love* that knife, BTW. I need to repair it - my Mom helpfully took it to her friends' place to get it sharpened and the guy ran it through one of those "knife sharpening machines". Instantly destroyed the mirror-like edge that I've spent HOURS honing on increasingly fine grades of waterstone.
The last grade that this knife is honed on is a 3 micron aluminum oxide abrasive film. It puts a mirror shine on the knife, and the edge is sharpe enough to carve sub 1mm thin slices out of a ripe tomato.
