      I hear you. There isn't much to explain beyond what I wrote above. Good contrast between the subject and background definitely helps. For practice, it might also help to shoot stationary subjects while controlling the movement with your own steps or hand motion, (That said, I do manage to get this type of "solid" result for both moving and stationary subjects.) Again, much of it is in getting the hang of controlling the motion of the camera (phone) in relation to the movement of the subject and your hand. I'll add more notes if I come up with any other suggestions.
