Simple Raw Burgers from Jinjee (recipe below) plus three raw leftover salads: grated beet & carrot; cabbage slaw; and green bean-red onion-garlic-olive oil-lemon-celtic sea salt-cherry tomato salad...)
"This is a new family favorite - we have to have it at least once a week! Blend up 2 cups of cashews in your vitamix blender until they are a fine powder. This takes only a few seconds on high speed. Chop up fine or food-process a bunch of celery and a red pepper. Mix all of the above in a bowl with salt - to taste - and some seasonings. - We've been using Fajita Seasonings from Spicely, those little boxes of seasonings - which has the following ingredients: paprika, onion, garlic, black pepper, oregano and cumin. Chop up some tomatoes and onions to top with, and wrap up in a lettuce leaf, with the following condiments:
Ketchup: Blend up a 1/2 cup of sun dried tomatoes with one medium tomato, a tablespoon of vinegar, and a tablespoon of honey
Relish: Food-Process one cup of dill pickles with a tablespoon of honey. Make sure you buy a brand that doesn't add chemicals or sugar. Bubbies is good.
Mustard: Again, look for a brand that doesn't add chemicals or sugar. Roland Organic Dijon uses only mustard seed and vinegar. As pickles and mustard are fermented products, they are usually not cooked.
