from Gourmet October 2005 -- we substituted 1/2 box of soft tofu for the 2 eggs and unsalted soy margarine for the butter. a really fluffy moist cake... -- the "whipped cream" is some of the left over topping from the raw food dessert the other night -- frozen and piped with a pastry bag -- it melted not long after the picture was taken ;)
