Pollito bebe pachamanquero - baby chicken pachamanca style Astrid & Gaston
This is one of the best things I have tried in the last weeks. A baby chicken cooked in a clay pot, with pachamanca herbs like paico and huacatay, and andean potatos.
On the outside it was charred and crispy and on the inside juicy and tender, really really good.
The original Pachamanca is cooked on a hole in the gorund using hot stones then covered.
Astrid & Gaston one of Lima's most well know places originally started as a French restaurants but over time moved into being an icon of Peruvian cooking in town. With so much succes that they have open outlets in Colombia, Chile and soon in Argentina.
