Dessert for Breakfast

    Carrot Cake Muffins

    1 3/4 C flour
    2/3 C firmly packed light brown sugar
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 tsp ground cinnamon
    1/2 C crushed pineapple in juice
    1/2 C vegetable oil
    1 egg, lightly beaten
    1 1/2 tsp vanilla
    2 C shredded carrots
    1/2 C golden raisins
    1/2 C walnuts finely chopped

    Preheat oven to 400ºF.
    In a large bowl, stir together flour, brown sugar, baking powder, baking soda, salt, and cinnamon. In another bowl, stir together pineapple, oil, egg, and vanilla until blended. Make a well in center of dry ingredients; add pineapple mixture and stir just to combine. Stir in carrots and raisins. Spoon batter into greased or lined muffin cups; bake 15 to 20 minutes, or until a cake tester inserted in center of one muffin comes out clean. Remove muffin tin to wire rack. Cool 5 minutes before removing muffins from cups; finish cooling on rack.

    Cream Cheese Frosting
    4 oz cream cheese
    2 Tbs butter
    1/2 tsp vanilla

    Blend until creamy.

      I had to sub regular raisins in this batch, too lazy to go to the store. I shouldn't be so lazy next time. I'll suffer them, but better with golden raisins.

      OK I admit it, part of the reason for the fav is the recipe LOL but the shot is outstanding too :) Wish I could photograph food...

      Thanks Diva, this is the only "porn"-like shot of the food I have taken, and so I posted it to the Utata project discussion.

      I try to include recipes in most of my baking shots. I figure that if I entice you, I should give some recompense.

      I have to try this recipe! I love muffins, and these seem to be extra yummy. I take it that C stands for cup? Our recipes don't use these kind of measurements, and I am afraid I do not know where to obtain baking soda..... But with some imagination this recipe must be 'do-able'....

      Yes, C stands for Cup. You might try this resoucre to help your conversions:

      And you could probably drop the pineapple juice a bit, increase the baking powder a bit, and substitute soda water for the baking soda.
