All-Star Cochon at The Cosmopolitan of Las Vegas

Cochon 555 is a one-of-a-kind traveling culinary competition and tasting event–five chefs, five pigs, five wine makers–to promote sustainable farming of heritage breed pigs. Each stop along the ten-city tour offers hard-working local farmers the opportunity to connect with like-minded agriculturalists, renowned chefs and the pork-loving public. For the first time, Cochon 555 Founder Brady Lowe, introduced All-Star Cochon, which took place at The Cosmopolitan of Las Vegas on Sunday, July 24, 2011.
All-Star Cochon brought together 10 leading chefs, four star butchers and 14 different heritage breed pigs for a sample of the best tastes from three years of Cochon 555. The ten chefs –past winners and fan favorites – worked together to prepare a ‘snout-to-tail’ menu from heritage breed pigs sourced in their local markets and then flown to Las Vegas for this ultimate pork tasting.
Participating chefs included Jamie Bissonnette of Coppa (Boston), Stephanie Izard of The Girl & the Goat (Chicago), Devin Knell of French Laundry (Napa), Mary Dumont of Harvest (Boston), the 2011 “Queen & King of Porc” Duskie Estes & John Stewart of Zazu (Sonoma), Mark Ladner of Del Posto (NYC), Andy Ricker of Pok Pok (Portland, OR), Alex Seidel of Fruition (Denver), John Sundstrom of Lark (Seattle), and the 2010 "King of Porc" David Varley of Michael Mina (San Francisco). Butchers include Amelia Posada & Emily Nakamura of Lindy & Grundy (Los Angeles), Ryan Farr of 4505 Meats (San Francisco), Joshua Applestone of Fleisher's Meats (NY) and Michael Sullivan of Blackberry Farm (Tennessee).
In addition, the restaurants of The Cosmopolitan of Las Vegas prepared amazing foods and specially prepared cocktails. Guests were also treated to side by side butchery demonstrations, cured meats, reserve wine tasting, and craft brews.
