The various stages of ripeness also plays a big part to how the coffee will transform into the cup, whether it is picked when it's bright red, burgundy red, dark burgurdy, etc. It is usually down to the producer to define how he feels best define the characteristics of his harvests. Some roasters can also request to have a certain plot of cherries to be harvested the way they want to suit the kind of tastes that they are looking for.
