An essaie from the Julie Child cookbook, Mastering the Art of French Cooking. My husband is not a fan so this will probably be the last time I make it though I really liked it and it was pretty cheap to make. Topped with shredded Parmesan Cheese.

Hey, guys! So I visited JoCooks. com last year and found a wonderful, spicy recipe called Brazilian Shrimp Soup that included red pepper, coconut milk, and lemon juice – a divine combination. I have since modified the vegetables, seasonings, and proteins, and had to rename it Brazilian Seafood Soup. When shopping for the ingredients, I found some cans of “Tomatoes with Habaneros” – oh, yeah! Spicy and scrumptious!

 

I'm telling you, it was so good that I could not sit within arm’s reach of my momma when I ate it - if you know what I mean!

TURKEY TORTILLA SOUP

 

1 Cup onion, chopped

1 Teaspoon olive oil

1 Can (4 ounces) green chilies, chopped

1 Package (1.25 ounces) taco seasoning mix

1 Can (16 ounces) tomatoes, undrained

6 Cups Turkey Broth or reduced-sodium chicken bouillon

1 Package (10 ounces) frozen corn

2 Cups Cooked Turkey, cut into 1/2-inch cubes

1/3 Cup fresh Cilantro, chopped

4 Ounces unsalted tortilla chips, coarsely crumbled

1/2 Cup Monterey Jack cheese, grated

 

1. In 5-quart saucepan, over medium heat, saute onion in oil 3 to 4

minutes or until translucent. Stir in chilies and taco seasoning mix;

cook 1 minute. Add tomatoes, breaking up with spoon. Stir in

turkey broth; bring to boil. Add corn and turkey, reduce heat to

low and simmer 5 minutes. Add cilantro.

 

2. To serve, spoon 1-1/3 cups soup in each bowl. Top each serving

with 1/2 ounce tortilla pieces and 1 tablespoon cheese.

At the wedding, we had a stove and cooked the soup right on the table.

eating home-made soup every day because of horrible cold.... (good girl, eh, cryptia??!!)

recipe:

2 bulbs garlic - roasted with some thyme & olive oil - roast @ 180 for about 20 minutes - let cool & skin

chop 2 medium leeks & 1 stalk celery and fry in some oil for about 5-7 minutes until soft - add 2 cups stock, 2 cups water, add 750g diced potatoes and some thyme, bring to boil, simmer for about 15 minutes or until potato is soft, add garlic. process to desired texture, Larry doesn't like creamy soups so i try to leave it a bit chunkier. Bring back to stove, add 1/2 cup cold water, bring back to heat - serve

1 1/4 pound lean ground turkey

1 can chili beans

1 can kidney beans, drained and rinsed

1 can corn

1 can Rotel or similar product

1 can diced tomatoes

1 large yellow onion

1 packet taco seasoning

1 packet ranch dressing mix

2-3 cups chicken broth, depending on how thick you want the soup (more like

chili)

 

Brown the onion and turkey meat in a nonstick pan sprayed with cooking spray.

When meat is browned, add the taco seasoning and ranch seasoning. Cook for a few

more minutes. In a large stock pot, combine the beans, corn, tomatoes, and

broth. Add the turkey mixture. Cook on low for 45 minutes, stirring

occasionally.

 

Top with fat free cheese or fat free sour cream. Delish!

 

I don't know how many cups this makes, probably around 10. It's Core and about

2-3 points per cup.

 

One of my all time favourite soups!! I've made this in the past and it was alway just "OK" but I've got to say my current effort was one of my best to date!! :)

Busy day today, but in the evening I still found time to cook this delicious pumpkin soup, with potatoes and leeks, perfect for staying light :))

this soup contains beef meal, tomatoes n some vegetables with natural acid flavour from cucumber tree.

making soup every day! boil potatoes, onions, spring onions, chicken stock, and seasoning. cook until well soft. mash. just before serving, add a pat of butter and some milk or cream

Quick-to-make light soup to enjoy outside on the patio as the temperature has started to rise out here in Phoenix. The base flavors of garlic, ginger and lemongrass are lightly sauteed before the chicken broth and water is added to intensify their essence. As it comes to a boil, angel hair pasta and diced chicken breast are added and allowed to cook for about 5 minutes. Once the time is up, the pan is set aside and allowed to sit off heat to finish cooking the pasta and to let the flavors meld.

 

The broth has a refreshing, silky and light lemon-y taste from the lemongrass with just the right amount of bite from fresh ginger and the red chile.

Lentil & Sausage Soup

 

From Weight Watchers Momentum Cookbook

 

1 ¾ cups per serving

 

Serves 4

   

Prep time 15 mins

 

Cook time 40 mins

   

2 tsp olive oil

 

2 carrots, thinly sliced

 

1 onion, diced

 

2 garlic cloves, minced

 

¼ pound turkey kielbasa, thinly sliced

 

1 ¼ cups brown lentils, picked over and rinsed

 

5 cups water

 

1 (14 ½ oz) can diced tomatoes

 

½ tsp salt

 

¼ tsp black pepper

   

1. Heat the oil in a large saucepan over medium heat. Add the carrots, onion, and garlic; cook, stirring frequently, until softened, about 5 minutes.

2. Add the kielbasa, lentils, and water; bring to a boil. Reduce the heat and simmer until the lentils are tender, about 20 minutes.

3. Stir in the tomatoes, salt, and pepper. Simmer until heated through, about 5 minutes longer.

ANTI-RADIATION SOUP (Serves 2)

Ingredients:

4 ounces tofu, cut in small squares

1 ounce kombu or nori, cut in strips

3 cups purified water

1 Tablespoon miso paste (or to taste)

1 lemon

1H cups cooked brown rice

1 Tablespoon toasted sesame oil (optional)

green onions, chopped (optional)

cilantro, chopped (optional)

 

Directions: Add the tofu and seaweed (nori or kombu) to boiling water and simmer for a few minutes. Stir in some miso paste for flavor (do not boil the miso), add juice of lemon and the optional ingredients if desired, cover, and let sit for 15–20 minutes. Serve with brown rice—eaten separately or stirred into the soup. This macrobiotic dish was shown to reduce radiation sickness after the Hiroshima bombing and will probably protect us from some of the hazardous effects of x-rays and metal exposures.
