Homemade Broccoli and Parmesan Pasta with Mushrooms

INGREDIENTS:

 

3 cups uncooked penne pasta (9 oz)

1 can (14.5 oz) Muir Glen® organic diced tomatoes, undrained

2 cups Alfredo pasta sauce

1 cup shredded smoked mozzarella cheese (4 oz)

 

DIRECTIONS:

 

1. Heat oven to 350ºF. Spray 1 1/2-quart casserole with cooking spray. Cook and drain pasta as directed on package.

 

2. Meanwhile, in 2-quart saucepan, heat tomatoes to boiling. Reduce heat to medium; cook uncovered 6 to 8 minutes, stirring occasionally, until liquid has evaporated.

 

3. In 2-quart saucepan, heat Alfredo sauce over medium-low heat until warm. Stir in cheese until melted. Mix sauce, pasta and tomatoes. Pour into casserole.

 

4. Bake uncovered about 30 minutes or until hot in center.

First time I had a creamy pasta sauce with a splash of port was at La Barca in London. The combination just works. I will never forget the smoked duck creamy mushroom port pasta I had there. This recipe uses the creamy walnut port sauce for background, and the chicken for substance and the roasted walnuts for a bit of crunch. Try it, I think you'll like it! Here's how I make it:

 

Ingredients:

penne pasta

walnut

double cream

butter

sliced chicken breast

garlic

olive oil

 

Method:

1. put oil in a pan with garlic

 

2. pan fry the walnut until you can smell the released nutty aroma and the nuts start to turn brown

 

3. remove the walnuts (set aside some for garnish later)

 

4. blend the walnuts and garlic with a splash of cream in a blender until smooth

 

5. return the walnut cream mixture to a pan

 

6. add a knob of butter and more cream

 

7. season with chicken powder and add as splash of port (optional)

 

8. pan-fry chicken breasts seasoned with salt and pepper until they caramelize

 

9. add chicken breasts to the walnut cream sauce

 

10. boil penne pasta until al dente

 

11. heat up walnut cream sauce until just simmering

 

12. strain the penne pasta and add the chicken walnut cream sauce to the pasta

 

13. mix well and garnish with the saved roasted walnuts

 

14. serve!

The Steelers take the swamps of New Jersey! Taking on the New York Jets and both New York and Pittsburgh make me crave Italian food so I baked up some good good! Zucchini, squash, onions and bell peppers mixed in with smoked mozzarella and fontina cheeses over Penne. I'm learning how to cook!! :) NOM!!! Go Steelers!

Penne pasta with chopped tomatoes, peppers, green onions, cucumbers, kalamata olives, in a light lemony vinaigrette with a lot of oregano. Serve with crumbled feta cheese on top.

Recipe:

In Skillet , saute onion with olive oil, add garlic. Add the tomatoes, vodka, margarine and then the creamer- season with the herbs and simmer 20 minutes. Add the Rice Parmesan in the end and combine- mixed with cooked penne pasta.

 

Feed an army (8)

 

2 cups crushed tomatoes

1 cup tomato sauce

1/4 cup olive oil

10 garlic cloves - minced ;1 yellow onion, minced

Red pepper flakes to taste

1/3 cup vodka

1/2 cup soy creamer

2 tablespoons Earth Balance; 1/2 cup grated Rice Parmesan

1 teaspoon Spike; 1 tablespoon italian seasoning

 

1 pound penne

  

Yummy dinner (or lunch) of whole wheat penne pasta. The pasta also has olive oil, capers, basil, and spinach.

This was cooked from scratch by Octo. This was very yummy and enjoyed by both!!

The Assignment:

For this assignment you are to imagine yourself as a photographer for hire. The assignment is to take a photo that will be used on the cover of a magazine featuring an article on nutrition. The photo can be an example of either good nutrition or poor, but should be framed in a manner that will allow for a space for text.

 

What it Took: This assignment gave me a chance to try a new vegetarian recipe - Mediterranean Vegetable, White Bean & Feta Penne. It took me longer to get the image than it did to make this dish! Took lots of pics of the layout near a window (minus the meal) to get settings correct. I had to work fast once the dish was finished to keep a fresh look.

 

Tried differerent color placemats and choose the red to accent the red tomatoes. I think I left enough room for the text. After looking at many covers of food-related magazines, I noticed that almost always only a portion of the dish/meal was shown. My own ciritique is that I should have taken the image more from a top view rather than side. Check it out in lightbox. By the way - it is delicious!
