Recipe of the most subtle and simple Bengali delicacy available here This picture came out so innocent and cute that I wanted to share the smile and joy with you. I wish I had used a tiny bit smaller aperture though. Oh well.

This Rava Kesari recipe is the most simplest sweet that is usually prepared on most of the festive occasions. Not only during festivals, when you have sudden guests at home I can bet this is the only sweet that can be prepared in minutes with minimal ingredients available in hand. I think most of you have tasted Hotel Adyar Ananda Bhavan kesari / Hotel Saravana Bhavan kesari which has melt in mouth texture and tastes so delicious. The main secret is that, they add more water so there is no chance of rava not getting cooked or lump formation. Also the quantity of ghee plays a vital role which yields soft and glossy kesari. Cooked a complete thali from my hometown today and felt like I was back home! This Udupi-Mangalore cuisine is heavily based on two main ingredients, fresh coconut and yogurt and of course the quintessential tadka of curry leaves in coconut oil. The spices used are minimal and very basic Ines as this regional cuisine is all about keeping the flavour of vegetables intact without overpowering spices. It is one of the healthiest regional cuisines of India and is lauded for its fresh and simple flavours.

This simple thali has

1. Beetroot palya (a simple stir fry of beetroot with tempering of mustard seeds n curry leaves in coconut oil)

2. MuLLu-soute Sasame (sa-sa-mey means mustard seeds. This is no-cook recipe where finely chopped cucumber is mixed in mustard flavoured coconut gravy)

3. Beetroot pachadi (grated beetroots in yogurt-coconut gravy)

4. Brahmi tambli (brahmi leaves in yogurt-coconut gravy flavoured with peppercorns and cumin seeds)

5. Tomato-pepper saaru (thin spicy soup of tomato and tamarind)

6. BasaLe kodhel (Malabar spinach and stems cooked with freshly ground paste of spices and coconut and tempered with garlic and curry leaves)

7. BaLekayi Melara/Majjige HuLi (Raw banana/plantain cooked in buttermilk-coconut gravy and tempered with fenugreek and curry leaves in coconut oil)

8. Kesari Bhaath (semolina pudding flavoured with saffron and ghee)

And no Udupi-Mangalorean thali is complete without a smudge of homemade no oil tender mango pickle. :blush: Sweet n delicious Kesar mango is mandatory during summers to end the meal. :grinning:

Recipe:

1. Boil milk.

2. Prepare grated carrots seperately

3. Cook the carrot in the milk until it solidify + pinch of kesari powder

(Added Ghee when carrot is cooked... not part of my mom's reciepe)

4. Roast raisins, cashewnuts, cloves(1 or 2) in ghee - seperately

5. Add Sugar one cup to the cooked carrot

5. Add a pinch of salt

6. Add crushed cardomom + roasted stuff of point 4

7. Cook till you get like this.

8. Server hot

Recipe:

1. Roast rava (one portion)in ghee (2 to 5 mins)

2. Roast raisins, cashewnuts, cloves(1 or 2) in ghee - seperately

3. Boil one and a half portion + half portion of milk + pinch of salt + pinch of kesari powder

4. When about to boil, sim it up and add the roasted rava

5. When rava is almost cooked, add one and half portion of sugar + ghee to the amount of love you have for the person you are going to server for ;)

6. Add crushed cardomom + roasted stuff of point 2.

7. Cook till you get like this.

8. Server hot with love and affection.

Semiya Kesari or Vermicelli Kesari is a sweet made with vermicelli, sugar, ghee and garnished with cashews and raisins. This is the most simple and easiest recipe that even beginners can prepare. Even bachelors can give a try. After marriage when I was left alone in the kitchen, the first sweet that I tried was this Semiya Kesari. It was truly a kitchen disaster because I added the sugar before the vermicelli got cooked, and the end result was an utter flop.
