Braise Table D'hôte Lunch.

 

Chef dude seems to have this thing with garnishing.

We went to Xi Yan a while ago and I got all three of their cookbooks. I'm working through them one by one.

 

Left: Chicken in hot and spicy sauce (口水鸡)

Right: cold spinach in sesame sauce, recipe below:

 

600g spinach

2 tbsp oil

1 tsp salt

roasted sesame seeds

 

Sauce:

3 tbsp sesame paste

6 tbsp warm water

1 tbsp white vinegar

2 tsp soy sauce

1 tbsp sugar

 

1. Wash spinach and bring water to boil. Add oil, salt and spinach, cook until spinach is wilted. Strain and cool.

2. Mix ingredients for sauce together, season to taste.

3. Squeeze water out of spinach and place 3-4 spinach onto a bamboo mat. Roll and press into the shape of a sushi roll. Cut into sections and arrange onto plate. Repeat with remaining spinach

4. Pour sauce over spinach and serve.
