I'm taking a break from Flickr. To those of you who celebrate Christmas, happy holidays.

I made my dad one of his favourite Christmas confections - fruitcake - out of another one of his favourites - home made mincemeat! This sucker took up a whole 11" springform with barely any room to spare, and clocked in at just over 6 lbs. It's a combination of two recipes from historic Toronto Star clipouts!

I put together these home made Thin Mints for fellow foodie Bon (http://www.flickr.com/photos/43114256@N00/) this Christmas. Adapted slightly from Baking Bites, these are a BETTER rendition of one of the great Girl Scout cookies from our childhood!

Steamed Eggless Traditional Christmas Cake or pudding recipe.

From 'Vegan Cookies Invade Your Cookie Jar'. Except that mine weren't vegan anymore as I used normal milk. I was just looking for an eggless cookie recipe as we didn't have any eggs at home (apart from some duck eggs that our duck, Hopper, had laid AGES ago but I'm not using those!). They were for a little Christmas party at a course I'm doing in college in Wolverhampton. I was originally going to make cinnamon rolls but we didn't have all the ingredients.

Recipe - Eggless Plum Cake (9 min video) Each person has their own list of 'must have' foods for Christmas. The most common among all is this Fruit Cake; that wonderful combination of nuts and dried fruits with barely enough cake batter to hold it all together. If you have ever made a Fruit Cake you know that what really sets this cake apart is how we repeatedly feed the cake, over time. It is jammed with raisins, currants, dried cranberries, dried figs and prunes, dried apricots, and candied fruit and peel (candied fruit is preserved fruit that has been dipped several times in a concentrated sugar syrup). Zach insisted the house be egg free just in case Nathan came over and he wanted to have some. So the Gingerbread recipe is from the WSD cookbook... Really yummy! And the frosting is eggless royal frosting. Found the recipe online and then I tweaked it alittle. It's made with lemon juice and cream of tartar to help it harden. It doesn't hold like concrete, but it holds good enough and it taste great! So, now we just need to share it!
