iron egg

"Iron eggs" from Taiwan. A specialty of of the windy seaside town Tan Shui. Eggs are repeatedly and alternately braised and air dried until the eggs shrink in size, turn black on the outside and develop a chewy texture.


Sold in vacuum sealed packs.
