I used this recipe from Daniel Boulud. The recipe called for beer and I didn't really know how to choose a beer to match the recipe. I used a beer with a drawing of a baby on the label. I'm not exactly sure what they should have tasted like but they weren't really remarkable in any way.

 

The recipe called for: beluga caviar. 12oz for 40 servings. Using a squeeze bottle to make 1.5in blini.

 

I used Tsar Nicoulai California estate osetra caviar. That "dollop" may be around 1/4oz. I used a spoon and guessed at the size of the blini. I had no idea about what the batter should look like at several stages of the preparation.

 

Next time, I'm going to try this recipe.
