Bacon wrapped, bruschetta stuffed chicken breasts (2)
Numerous factors have conspired over the spring to keep me from spending very much time on Flickr. Some of those elements are still going on my life, but others have passed, so I'm jumping on any available moment I can to work on my photography in some capacity (taking new shots, sorting through past images, uploading to Flickr, visiting my wonderful Flickr contacts' streams, etc), as the joy that photography brings me is an amazing counterbalance to the stress and worry said issues sometimes bring to my life.
The image below is one from my archives, it features a supper I prepared for my husband one spring day of oven roasted roma tomato, garlic, Parmesan cheese, fresh herb, and Calabrese bread crumb stuffed chicken breasts wrapped in Maplewood smoked bacon, with a side of steamed green string beans drizzled with rosemary olive oil. The bruschetta inspired stuffing and the ribbons of bacon do a marvelous job of keeping the chicken moist, while imparting lashings of flavour to this hearty dish.
