fresh favas, out of their skins

Sad but true: My very first time cooking fresh fava beans. Not my last, most certainly.

    They are the BEST!

Babies love them, too (who knew?).

Did you have them with a nice Chianti?
  • deb 8y

No, but we should have. I can't wait to make something with them again soon.

Phc -- I can believe it! I used to babysit for these twins when I was in high school, and when they were teething, all they wanted to chew on were lima beans, straight from the freezer. Jeez, those kids must be seniors in high school now. Shudder.

I only recently cooked with favas for the first time, too! What a great discovery. I can't believe I never had them before this year.

Oh my gosh, one of my FAVORITE things about spring. With olive oil, lemon juice, and a little ricotta...DIVINE. And the most gorgeous shade of green.
