I know. It just looks awful. But if you are willing to take my word for it, this is one of my favorite brunch/egg dinner dishes to make. A ridiculous amount of baby spinach is sauteed with garlic, onions and slivered mushrooms until soft and drained. A bit of cream is added in, as well as seasoning and then you create wells for eggs (original recipe: 4, this one was scaled to cook 12, but, uh, only 11 fit. so there.), carefully break one into each and bake them for about 10 minutes, until the whites are firm and the yolks are still loose. Cover it with grated parmesan, and in this case, scoop onto a chive biscuit. Sing happy happy joy joy.
