lemon raspberry mini-muffins

These muffins are perfect. On the cakey-dessert side for my tastes, but my tastes are incapable of resisting them. They're AMAZING. Four teaspoons of grated lemon peel are mashed with sugar into a paste--the smell, the taste, will blow your mind--and a simple buttermilk/vanilla muffin is baked with this sugar. The raspberry gets plopped on top, providing contrast that puts the blueberry-muffin one to shame. I had no idea these would come out so divine. Outside of PMS, I have never felt this strongly about a baked good.
