In sugar with a pinch of sea salt. To get it to stick, I moved it over to a piece of plastic wrap and "sushi rolled" it to get the sandy bits embedded.

This looks very tasty - especially when I am craving sugar :) Are you using regular sugar or something else? The granules look larger and way prettier than what comes out of those regular Domino bags.

I used clear sanding sugar (1/2 cup) with flaky Maldon sea salt (1 tablespoon)... trying to get the look and vibe of a margarita glass rim. The log is first brushed with egg yolk. I adapted it from Dorie Greenspan's Lemon Sables, replacing the lemon zest with two limes worth of zest, and half an orange's worth of zest. I replaced the vanilla with tequila. I am obsessed.

No really: I also have margarita chicken marinating in the fridge right now. It's out of control.

hahaha, that's awesome!! I made a similar chicken the other day - and actually thought of you, with all your love of limes! I love sables - they're my favorite type of cookie! I need to get some sanding sugar - I am missing that, among many items, in my kitchen!
