I don't know why it took me so long but I started buying eggs (mostly) at the market and I love them.

    One of my coworkers has happy chickens at her farm and I buy eggs from her... Yum.

    It's like opening a brand new box of crayons, isn't it? Less technicolor, but so happy-making. :) One of the local restaurants here has a rooftop garden downtown, and among the goodies the hens who lay our favorite local eggs eat are the marigolds grown there. The yolks are practically orange, and the texture of both yolks and whites is amazing. A lot of the local bakers here swear by them for getting incredible results (not that I'd know anything about that, non-baker as I am). But they cook up so beautifully, and make incredible, silky pasta. The whites make a damn fine fizz or flip, too, if you're the drinking sort like we are.

    i used to not particularly care for straight up eggs, and in fact there was a time they just totally grossed me out. until i lived with roommates for many years (until they got married and bought a home of their own) and he had family in maine with a farm. he would always return from a visit with the most awesome things (did i mention his BIL was also a lobsterman?!) but i was most blown away by the eggs.

    i freely admit i usually can't tell a damn bit of difference between organic this or that or whatever so i was skeptical but DAMN. and since they haven't been shipped all over and whatever else they last forever in the fridge!!
