The recipe calls for powdered milk and I know, it's like the weirdest thing. I have been, if you think about it, lucky enough to never have had to buy it for budget or other reasons so I was perplexed at the store. First, the smallest package made three quarts of milk and I only needed less than a packet. Then I didn't understand why they were all non-fat (what if I wanted whole milk, not skim?) -- duh. And then I tried to figure out if I could use something else -- evaporated milk, real milk -- and have the same flavor but the amount needed would have made almost two cups of milk and obviously that would have throw the recipe off tremendously.

 

And so I trusted that Reinhart is a genius and bought more powdered milk than I'll ever use in my life. And he was. Enough that I can hopefully use this up making it again and again.
