new potato salad

    Newer Older

Another Dud of Summer that I need to admit I am just never going to get to writing up. I spied this potato salad from Sara Jenkins in New York Magazine, and you know me, I can never resist a potato salad, but it's, well, dull. And here's the pinnacle of my issue with oil-based potato salads: there seems to be this idea that they're somehow "lighter" but really, the oil just absorbs and absorbs and you need to keep adding it, and oh, it is still dry. This was. Next time, I'll make this one instead.

... I thought bokeh was artfully out-of-focus parts of a photo? I don't think this photo has any.

Would the oil absorption depend on the type of potatoes used? Like if I used red potatoes would it be less oily? Just wondering. Well no matter how it turns out, your dishes always look delish! :)
