barely shrunk!

Wow, does this please me. I had a crust disaster Sunday morning. The one I'd make with some ground almonds in it Saturday night before we went out was impossible to roll the next morning--it was too dry, too crumbly. However, I tried FOUR times, each time it of course picked up more flour, got drier, then I tried adding more water and finally threw it in the trash. Then I made this one--almond free and with a nifty technique that didn't require the use of pie weights--and check it out! It might be my least shrunken tart dough ever.

 

These are the things that make me happy.
